Lost Cuisine was born from two chefs, two cultures, and one shared belief that food should be authentic, bold, and personal. We bring fusion menus to life, drawing from American BBQ, French technique, Filipino tradition, Southern soul, and Japanese precision. Every event is different. Every menu is yours.

Our Story
Two Chefs. One Vision.
John and Fred met as classmates at Riverside City College Culinary Academy, where a shared passion for bold, expressive flavors sparked a lasting partnership. They went on to train in the high-end kitchens across the South of France, where they honed classical techniques and refined their culinary approach, shaping a shared foundation rooted in precision and creativity.
John
John’s passion for cooking started early, inspired by his grandmother. After training at Riverside City College Culinary Academy and working in two high-end restaurants in France, John further refined his skills as Chef de Partie at a high-end Japanese restaurant, mastering precision, technique, and presentation. His expertise ensures every dish is professional, authentic, and beautifully executed while keeping creativity at the heart of every menu.
Fred
Fred’s passion for cooking began in his hometown of South Carolina, where family and food were deeply connected. During his service in the Marines, he was stationed in Hawaii, where he cooked for unit events, further shaping his love for bringing people together through food. After his service, he pursued culinary training at Riverside City College Culinary Academy and in fine dining kitchens in France, refining his technique and disciplined approach. His experience cooking for large-scale events developed his precision, teamwork, and ability to create meals that bring people together.
